Gastronomy
Restaurant with Michelin Star and Green Star in Valladolid
A different gastronomic experience
An exuberance of avant-garde and creativity. A cuisine that reflects a proposal close to the environment, based on local produce, from the garden and seasonal. Where wine inspires, supports and enhances the gastronomic discourse. A unique gastronomic experience to eat sober bites of the environment.
Refectorio
Backed by a Michelin star, two Repsol Suns and a Green star, Refectorio delights with an impeccable gastronomy with a classic base, but that exudes avant-garde and personality. It is guided by the seasonal product, with special prominence of the local pantry, the product of the area served by a local supplier, and of course, the wine serves as inspiration. Its philosophy is articulated in two menus that reflect this proposal close to the environment.
Vinoteca
Vinoteca’s invitation is more relaxed and informal. A restaurant located above La Cueva, which was once the cilla or warehouse and now houses the winery’s private collection. Vinoteca presents a menu linked to local and local produce, designed for sharing and where it is possible to taste up to 40 wine references. A simple, light but sophisticated experience.
Calicata Terroir Bar
An essential stop for lovers of unique experiences. Calicata Terroir Bar is a unique outdoor space surrounded by vineyards and pine forests that gives customers the opportunity to put the finishing touch to their visit to our winery and estate with a gastronomic proposal linked to local produce, from our own garden and producers in the area. And in which they will also be able to taste the wines of the winery and other references.
Open only during the summer season.
Terrace of the Hospedería
The Terrace of the Hospedería, designed as a garden and mimicking the environment, is a green space that surrenders to the unparalleled views of the Abbey of Santa María de Retuerta. A fabulous outdoor terrace where you can enjoy the classic and traditional cuisine of the region and, of course, wonderful signature cocktails. The icing on the cake is the stellar experience, because from this same space guests can observe the imposing sky of the Duero Valley through a telescope.
Open only during the summer season.
The Cloister Garden
During the summer season, the Cloister Garden is one of the protagonists of the summer at the Abbey. A space full of history to which Vinoteca’s culinary proposal is transferred and where you can also enjoy our à la carte breakfast. A space that combines the best gastronomy with a unique architectural and natural environment.
Open only during the summer season.
Chapter Room
The Chapter Room still retains the solemnity of the monks who once deliberated here and shaped the life of the monastery. Just a stone’s throw from the cloister, this 12th-century Romanesque space preserves the serenity of the Cistercian tradition and the echo of its silences.
Today, its centuries-old walls continue to speak, bearing witness to centuries of rituals, decisions, and public confessions. Transformed into a haven of calm and cocktails, it now invites you to savor time with the same depth with which a fine wine is enjoyed at rest.
Hours: 12:00 pm – 10:30 pm.
